L’Extase cognacs are meticulously crafted from a 40-hectare family vineyard located exclusively in Grande Champagne, a prestigious Premier cru of the Cognac appellation.

Our Ugni-Blanc grapevines, carefully tended to yield moderate harvests, are cultivated using traditional methods such as narrow and trellised paths. A significant portion of the viticultural work is still performed by hand, exemplifying the indispensable expertise of the winegrower.

Year after year, we deepen our commitment to sustainable cultivation by progressively reducing the use of phytosanitary products, ensuring the preservation of our vineyard's natural ecosystem.

Vinification

Vinification

The grape juice is promptly vinified immediately after the bountiful summer harvest. All the wines forming the cornerstone of our Cognacs are meticulously handpicked and vinified on our estate by our family. Our winemaking process is intentionally straightforward, allowing nature's influence to shape the final outcome.

The resulting wine, characterized by its distinctive floral notes and the vibrant acidity inherent to Grande Champagne, undergoes ideal preservation throughout the winter, benefiting from the region's natural cold, until the time of distillation.

No sulfur or other preservatives find their way into our wines, embracing a purist approach to winemaking.

Distillation

Our wines undergo the renowned Charente method of distillation, known as "à repasse," within small capacity stills (17 hectoliters per load), affording us meticulous control over every aspect of the distillation process.

The eaux-de-vie we obtain are the result of a painstaking selection of the most exquisite aromas from our wines. Distilled from unfiltered wines, where the lees play a crucial role, these eaux-de-vie acquire a sumptuous, velvety texture and an unparalleled aromatic intensity.

Only the wines produced on our estate, steeped in the heritage of generations of distillers within our family, find their way into our Cognacs, safeguarding our unwavering commitment to quality.

Ageing

After distillation, our precious eaux-de-vie embark on a transformative journey within ancient French oak barrels, carefully housed within the sanctuary of our cellars. Over the course of many years, and often several decades for the most promising expressions, they engage in a profound exchange with the surrounding air and wood, maturing and developing their unrivaled character.

New barrels are approached with particular care, as the potential for aging of eaux-de-vie sourced from Champagne soils and distilled on lees is significantly greater. Patience is a virtue as these exceptional spirits demand numerous years to unveil their full potential, captivating connoisseurs with their sublime intricacies.

Each year, we meticulously taste and assess each of our estate's eaux-de-vie, cataloguing their progress and, when necessary, transferring them to more suitable containers that complement their individual development.

Once our eaux-de-vie have reached optimal maturity, those destined for the market enter the final stages of our craft.

Driven by our unwavering commitment to excellence, we select only a handful of eaux-de-vie possessing unparalleled quality and distinctiveness for the production of our Cognacs.

Employing the Small Batch method, our Cognacs are meticulously crafted in small, intricately managed batches. This approach ensures uncompromising attention to detail, allowing us to achieve the perfect balance and harmony that define our exquisite offerings.

To fine-tune the final composition, our Cognacs are skill-fully adjusted to attain the desired alcohol level, initiating a meticulous "marriage" process. During this period, which extends for over a year, the Cognacs rest, acquiring remarkable depth, harmony, and a lingering mouthfeel before they are ready

Tasting, quality control, and filtration before bottling mark the culmination of a lengthy production cycle spanning several years.

It is worth noting that throughout the entire process, the production is meticulously overseen by the DAVIAUD family, ensuring that each bottle of this winegrower's Cognac bears a genuine hallmark of quality.
